Anna’s Best Butter Tarts.

The Canada Day Long Weekend is just around the corner and I just can’t help but share a Canadian recipe favourite: Butter Tarts.

I honestly have no idea why but butter tarts are a Canadian classic while other countries hardly understand the appeal. Tell me what’s not to love: flakey pastry crust, a gooey sugary filling, all wrapped in a warm bite-size treat.

My girlfriend, Anna has an amazing recipe of her own and though I’ve made some subtle updates in the past {like adding a hint of nutmeg and using homemade crust from here}, her version was my first intro to the Canuck confection and still remains my personal favourite. It is a simple & sweet recipe to test out your butter tart taste buds.

Anna’s Recipe is below & she uses pre-made tart shells like these ones here:

~ 1/4 Cup of Melted Butter
~ 1 1/4 Cups of Brown Sugar {you can add another 1/4 Cup if the mix is too wet}
~ 1 Tsp of Vanilla
~ 1 Egg

~ 1 1/2 Cups of Sultana Raisins {Soaked for 5-7 minutes in Hot Water}
~ 1/2 Cup of Walnuts

~ Pre-heat the oven to 350 degrees
~ Set your tart shells on a baking sheet
~ Mix the melted butter, brown sugar, vanilla & your egg
~ Add raisins and/or walnuts, if using the option
~ Pour filling in to tart shells, topping half way.
~ Bake for 15-17 minutes
~ Let cool for 10 minutes before pulling tarts from aluminum casing
