You guys. I seriously had the best weekend and you know why?
Because I did close to N OT H I N G. Like I had obligations which I was committed to and yes, I did something each and every day but it was such a treat to actually enjoy some time in my city and in my home.
So I took full advantage and woke up Saturday feeling refreshed and inspired by my 10 PM TGIF bed time and decided to whip up some cinnamon buns.
Now, I don’t know about you but I really thought I was taking on a massive task.
Turns out cinnamon buns can be really easy!
Much to my surprise and delight I rolled these out (puns!) in under two hours by using this recipe here.
I stayed consistent to the recipe provided except I used regular butter so mine technically are not vegan.
I also ran out of flour so I ended up using two cups instead of three and they still turned out perfect.
For the icing I used the simple mixture of 1 cup (112 g) organic powdered sugar and 1-2 Tbsp (15-30 ml) almond milk.
Next time I’ll try 2.5 cups of flour to see if I can get them a little more fluffy but by the sound of it from family and friends (and the fact that these were all eaten within five hours of making them) my first attempt was deliciously successful.
