Muffins for my Muffin

Quickly whipped up these muffins thank to my girl, Amy. She discovered this insanely fast and healthy muffin recipe and adapted it by using gluten free oats, adding chia seeds and swapping chocolate for carob chips. Now I’m a bit under the weather this week, so I treated myself and kept the chocolate chips in there but I swear this took 10 minutes to blend together (you actually use a blender or food processor which makes it SO fast)!

I would also be sure to spray your muffin paper liners like she hinted to in the original recipe. I of course forgot to this this and it’s made these buggers a little tough to peel off every last bite!
