smashed chickpea sandwich.

over the weekend, the bf & i had a relaxing saturday afternoon. feeling tickled with time & energy to make something delicious, i backlogged my brain & decided to finally whip up the smashed chickpea sandwich i first talked about here.

the recipe was so simple & even with a few tweaks {olive tapenade instead of olives, baba ghanoush spread instead of tahini, spelt flour toast} the result was a fresh, filling vegetarian treat ~ that went perfectly with the red peppers & soup i made here and here.
